This shredded Mexican chicken tastes so good and is perfect for taco Tuesday and meal prep!

This is a slow cooker recipe that makes chicken that is tender, juicy, and full of amazing flavors! This chicken can be used in so many ways. Nachos, tacos, wraps, burritos, burrito bowls and many more dishes call for shredded Mexican chicken. It is a family favorite in my household and I enjoy making it because it only takes me 5 minutes to prep!

This recipe uses just 4 ingredients and it is honestly one of my favorites because of how easy it is to make! I am a sucker for how convenient some dishes are, and they come in handy on those extra busy days. I also enjoy this chicken throughout the week for lunch. It is definitely one of those meals that you can reheat the next day and the flavor and tenderness will still be there.

Slow cooker recipes basically consist of throwing a bunch of ingredients all together and then being able to cook hands free for a few hours. If you have to leave the house for a few hours or want to take a nap or do other work, you can do so when making slow cooker meals! That is my favorite part about the slow cooker and I try to use it as much as possible to save time and the clean up is super easy as well!

Ingredients in Slow Cooker Shredded Mexican Chicken

Boneless Chicken Breasts– I use chicken breasts when I make this recipe and it turns out full of flavor, fork tender, and juicy unlike many chicken breasts recipes.

Chicken Taco Seasoning– This is a premade seasoning that is so convenient for this recipe. I use the McCormick brand of seasoning.

Chicken Stock– This gives the chicken flavor and makes sure that the chicken breasts do not get dried out while cooking.

Salsa– If you like your chicken to be spicy, mild, have chunks of veggies, no veggies, this is the ingredient that you change to your preference. I use Tostitos chunky mild salsa and it tastes great!

Tips for the Best Slow Cooker Shredded Mexican Chicken

  • For the best results make sure to follow the recipe as written otherwise your chicken may come out too dry or too watery.
  • Use boneless chicken or cut the bone out before cooking. You can also use a mix of boneless chicken breasts and boneless chicken thighs for even more flavor and tenderness.
  • If you want spicy chicken, then use a spicier salsa.
  • If you want no veggies in your chicken, then use a salsa that does not have any. The Taco Bell brand does not have any veggies.
  • Make sure you cook it for the right time so that the chicken is fork tender and shreds apart easily.
  • You can add in corn, black beans, diced tomatoes, chopped onions, etc to add more flavor and make it your very own creation.
  • Shred the chicken in the slow cooker because the extra juice left while cooking is going to soak into the chicken. This is what gives it the most flavor and keeps it from drying out.
  • I always use slow cooker liners because the clean up is super easy afterwards. You can skip this step if you do not have any.
  • This is the slow cooker that I use, and I love it!

How to Make Slow Cooker Shredded Mexican Chicken

  1. Make sure your slow cooker is plugged in.
  2. Pour chicken broth, salsa, and chicken taco seasoning packets into the slow cooker and mix everything together well.
  3. Rinse your chicken breasts off and put them into the slow cooker.
  4. Make sure the chicken breasts are fully coated in the sauce mixture.
  5. Place the lid onto the slow cooker and cook the chicken on high for 4 hours.
  6. After the time is up, check to see if the chicken is fork tender and if it is then shred it in the slow cooker then mix it all around so that everything is all mixed together. If it is not, then cook it for a little longer and just keep checking on it until it is ready.
  7. Use for tacos, nachos, burrito bowls, or however you would like.
  8. Enjoy!

  • 2 lbs Chicken Breasts boneless
  • 2 Chicken Taco Seasoning Packets
  • 1/2 cup Chicken Stock
  • 1/2 cup Salsa

Instructions
