  • 3 green onions sliced
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha or chili paste (optional)
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Prepare Vegetables: Heat sesame oil and olive oil in a skillet. Stir fry bell pepper, snap peas, and carrots until slightly tender.
  2. Add Aromatics: Add garlic, ginger, and green onions, cook until fragrant.
  3. Cook Noodles: Stir in zucchini noodles, cook until tender.
  4. Make Sauce: Whisk soy sauce, rice vinegar, honey, and sriracha. Pour over noodles and veggies.
  5. Finish and Serve: Remove from heat, sprinkle with sesame seeds, and serve.
