Apple Pie Cupcakes

Ingredients
  

Apple Filling

  • 2 Granny Smith Apples
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 cup Brown Sugar
  • 2 tbsp Salted Butter
  • 1 pinch Salt

Cupcake Batter

  • 1 box Spice Cake Mix Betty Crocker
  • 1 cup Milk
  • 1 cup Salted Butter Melted
  • 4 Large Eggs
  • 1 tsp Pure Vanilla Extract
  • 1/2 cup Applesauce

Cinnamon Cream Cheese Frosting

  • 1/4 cup Unsalted Butter
  • 4 oz Cream Cheese
  • 2 cups Powdered Sugar
  • 1/2 tsp Clear Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1 pinch Salt

Instructions
 

  • Peel and dice the apples. 
  • In a medium saucepan, add the diced apples and the rest of the apple filling ingredients and cook over medium heat. 
  • Continue to stir everything together until completely combined and bring to a simmer. 
  • Once the apples are fork tender remove them from the heat. 
  • Preheat your oven to 350 degrees Fahrenheit.  
  • In a large mixing bowl, mix all of your cupcake batter ingredients together with a hand mixer or stand mixer.  
  • Place your cupcake liners in your cupcake pan and fill each liner ¾ of the way full. 
  • Add some of the apple filling to each filled cupcake liner. 
  • Bake in the oven for about 15 minutes or until a toothpick inserted comes out with a few moist crumbs. 
  • In a separate mixing bowl, cream together your frosting butter and cream cheese. 
  • Mix in powdered sugar one cup at a time. 
  • Mix the cinnamon, salt, and vanilla extract in. 
  • Once your cupcakes are completely cooled, pipe a ring of frosting around each cupcake. 
  • Fill each ring of frosting with more apple filling. 
  • Enjoy!
