- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Mix-ins:
- 3 cups old-fashioned rolled oats
- 1 cup dried cranberries
- 1 cup white chocolate chips
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to wet ingredients and mix until combined.
- Add Mix-ins: Stir in oats, cranberries, and white chocolate chips.
- Bake: Drop rounded tablespoons of dough onto baking sheets and bake for 10–12 minutes until edges are golden. Cool on pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For chewier cookies, slightly underbake and let them finish setting on the baking sheet.
- You can substitute dried cherries or chopped dried apricots for the cranberries.
