These Twist & Shout Chocolate Hazelnut Rolls are soft, fluffy rolls filled with a luscious chocolate hazelnut spread, sweet brown sugar, and cocoa powder mixture, baked to golden perfection. Dough:

  • ¾ cup 2% or whole milk
  • ¼ oz active dry yeast
  • 2 tbsp granulated sugar (24g)
  • 4 tbsp unsalted butter, room temperature (57g)
  • ¼ cup light brown sugar (48g)
  • 1 large egg
  • 2 tsp vanilla extract
  • 1¾ cups bread flour (210g)
  • 1¼ cups all-purpose flour (150g)
  • ½ tsp salt
  • Neutral oil (for greasing bowl)

Filling:

  • ¼ cup + 1 tbsp Nutella or chocolate hazelnut spread (93g)
  • ⅓ cup light brown sugar (64g)
  • 1 tbsp cocoa powder

Frosting:

  • 3 tbsp Nutella (56g)
  • 3 tbsp cream cheese (45g)
  • ½ cup powdered sugar (60g)
  • 1 tsp milk


Instructions

  1. Activate Yeast: Warm the milk to lukewarm temperature and sprinkle the active dry yeast over it. Let it sit for 5–10 minutes until it becomes foamy and activates.
  2. Mix Wet Ingredients: In a large bowl, combine granulated sugar, unsalted butter, light brown sugar, the large egg, and vanilla extract. Stir in the activated yeast mixture until well combined.
  3. Add Dry Ingredients & Knead Dough: Gradually add bread flour, all-purpose flour, and salt to the wet mixture. Mix and knead the dough until it turns soft and elastic, about 8–10 minutes by hand or 5–6 minutes using a mixer with dough hook attachment.
  4. First Rise: Lightly grease a clean bowl with neutral oil, place the dough inside, and cover it. Let the dough rise in a warm spot until doubled in size, approximately 1 to 1½ hours.
  5. Preheat Oven: Set the oven temperature to 350°F (175°C) to prepare for baking.
  6. Roll & Spread Filling: On a floured surface, roll the risen dough out into a large rectangle. Spread the Nutella evenly over the dough.
  7. Add Sugar & Cocoa: Sprinkle the brown sugar and cocoa powder evenly over the Nutella layer, then roll the dough tightly into a log shape.
  8. Slice Rolls: Cut the rolled dough into 1½-inch thick slices and arrange these pieces evenly in a greased baking dish.
  9. Bake Rolls: Place the baking dish in the oven and bake for 25–30 minutes, or until the rolls are golden brown and puffed up.
  10. Prepare Frosting: While the rolls bake, beat together Nutella, cream cheese, powdered sugar, and milk until the frosting is smooth and creamy.
  11. Frost Rolls: Once baked, frost the rolls while still warm for a melty glaze effect or wait until cool for a thicker frosting layer before serving.

  • You can use either 2% or whole milk based on preference; whole milk yields richer rolls.
