For the seasoned ground turkey:
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tomato sauce
- 1/4 cup water
For the bowls:
- 2 cups cooked brown rice or cauliflower rice
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup diced cherry tomatoes
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1/4 cup shredded cheddar cheese
- Optional: lime wedges, hot sauce, sour cream
Instructions
- Prepare the seasoned ground turkey: Heat olive oil in a large skillet over medium heat. Cook onion until soft, then add garlic and cook briefly. Add ground turkey and cook until browned. Season with chili powder, cumin, smoked paprika, salt, and pepper. Stir in tomato sauce and water, simmer until thickened.
- Assemble the bowls: Divide cooked rice among containers. Top with seasoned turkey, black beans, corn, tomatoes, avocado, cheese, and cilantro. Refrigerate for meal prep. Add lime wedges and optional toppings before serving.
