Description

  • 1 egg yolk
  • 1–2 tablespoons ice water

For the Pastry Cream:

  • 2 cups whole milk
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 4 large egg yolks
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 ½ pounds fresh strawberries, hulled and halved
  • ¼ cup apricot jam
  • 1 tablespoon water

Instructions

  1. Make the Crust: Combine flour, powdered sugar, and salt. Cut in butter, add egg yolk and water. Chill, roll out, press into tart pan, bake.
  2. Prepare the Pastry Cream: Heat milk, whisk sugar, cornstarch, and egg yolks. Cook with milk until thick, add butter and vanilla. Chill.
  3. Assemble: Spread pastry cream in tart shell, top with strawberries. Heat jam and water, brush over strawberries. Chill before serving.
