  • 60-80ml extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Bread

  • 1 baguette or ciabatta loaf, sliced
  • Olive oil, for brushing


Instructions

  1. Prepare the Tomato Mixture: Combine the coarsely chopped and drained tomatoes, finely chopped red onion, crushed garlic cloves, and finely chopped fresh basil leaves in a medium bowl. Mix well to blend the flavors.
  2. Add Dressing and Seasoning: Drizzle the mixture with 30ml of balsamic vinegar and 60-80ml of extra virgin olive oil. Stir thoroughly to coat all ingredients. Season with salt and freshly ground black pepper to taste. Let this mixture sit for 10 to 15 minutes to allow the flavors to meld.
  3. Preheat the Oven or Grill Pan: Preheat your oven to 375°F (190°C) or heat a grill pan over medium heat to get ready for toasting the bread.
  4. Prepare the Bread Slices: Lightly brush both sides of each bread slice with olive oil. This helps achieve a golden, crisp texture upon toasting.
  5. Toast the Bread: Place the bread slices in the preheated oven for 8 to 10 minutes or, if using a grill pan, grill each side for 1 to 2 minutes until the bread turns golden and crisp.
  6. Assemble the Bruschetta: Generously spoon the marinated tomato mixture onto each toasted bread slice. Ensure each piece is well topped with the flavorful tomato topping.
  7. Serve: Serve immediately to enjoy the contrast between the crisp toasted bread and the fresh, juicy tomato topping. Garnish with extra basil leaves if desired for added aroma and presentation.
