Ingredients

Scale

Main Ingredients

  • 3 cups Cooked chicken, shredded or diced
  • 8 oz Wide egg noodles, cooked and drained
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 cup Sour cream
  • 1/2 cup Milk
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • Salt and pepper, to taste
  • 1 1/2 cups Shredded cheddar cheese, divided

Vegetables (Optional)

  • 1 cup Frozen peas and carrots

Topping

  • 1/2 cup Crushed Ritz crackers or buttered breadcrumbs
  • 2 tablespoons Melted butter

Garnish (Optional)

  • Chopped parsley

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly and set it aside to prepare for the casserole mixture.
  2. Mix Main Ingredients: In a large mixing bowl, combine the cooked chicken, cooked egg noodles, cream of chicken soup, cream of mushroom soup, sour cream, milk, garlic powder, onion powder, and half of the shredded cheddar cheese. Stir everything together until the mixture is fully combined and creamy.
  3. Add Vegetables and Season: If using, gently fold in the frozen peas and carrots to add color and nutrition. Season the mixture with salt and pepper according to your taste preferences.
  4. Assemble in Baking Dish: Pour the creamy mixture evenly into the prepared baking dish. Evenly sprinkle the remaining shredded cheddar cheese on top of the mixture.
  5. Prepare and Add Topping: In a small bowl, mix the crushed Ritz crackers or buttered breadcrumbs with the melted butter until well combined. Sprinkle this mixture evenly over the top of the casserole to form a crispy topping.
  6. Bake the Casserole: Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly browned and crisp.
  7. Cool and Garnish: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Garnish with chopped parsley if desired before serving to add a fresh, vibrant touch.

Notes

  • Use leftover or rotisserie chicken for convenience.
  • Frozen peas and carrots are optional but add great flavor and color.
  • Ensure the noodles are cooked al dente to avoid mushiness after baking.
  • Substitute breadcrumbs for Ritz crackers for a different texture.
  • Allow casserole to rest slightly before serving to set.
