For the Coating:
- 1 cup panko breadcrumbs
- ½ cup plain breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil or melted butter
- Cooking spray
Instructions
- Marinate the Chicken: In a large bowl, combine chicken pieces, buttermilk, salt, pepper, garlic powder, and paprika. Marinate in the refrigerator for at least 30 minutes.
- Prepare the Coating: Mix panko breadcrumbs, plain breadcrumbs, Parmesan cheese, and olive oil until coated.
- Coat the Chicken: Dredge marinated chicken in breadcrumb mixture, pressing lightly to coat.
- Bake: Arrange nuggets on a baking sheet, spray with cooking spray, and bake at 400°F for 20-25 minutes.
- Serve: Let cool slightly before serving with your favorite dipping sauces.
