  • 1 pound ground beef or ground turkey

Vegetables and Beans:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 teaspoon ground cumin
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (10 oz) can diced tomatoes with green chilies

Broth and Seasonings:

  • 2 cups beef or chicken broth
  • Salt and pepper to taste

Toppings (optional):

  • Shredded cheese, sour cream, tortilla chips, avocado, or cilantro

Instructions

  1. Cook the Meat: In a large pot, heat olive oil and cook the ground beef or turkey until browned, about 6–8 minutes. Drain excess fat if needed.
  2. Saute Vegetables: Add onion and garlic, cook until softened, then stir in taco seasoning and cumin.
  3. Add Ingredients: Mix in beans, corn, tomatoes, and broth. Bring to a boil, then simmer for 20–25 minutes.
  4. Season and Serve: Adjust seasoning with salt and pepper. Serve with desired toppings.
