- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 teaspoon ground cumin
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can diced tomatoes with green chilies
Broth and Seasonings:
- 2 cups beef or chicken broth
- Salt and pepper to taste
Toppings (optional):
- Shredded cheese, sour cream, tortilla chips, avocado, or cilantro
Instructions
- Cook the Meat: In a large pot, heat olive oil and cook the ground beef or turkey until browned, about 6–8 minutes. Drain excess fat if needed.
- Saute Vegetables: Add onion and garlic, cook until softened, then stir in taco seasoning and cumin.
- Add Ingredients: Mix in beans, corn, tomatoes, and broth. Bring to a boil, then simmer for 20–25 minutes.
- Season and Serve: Adjust seasoning with salt and pepper. Serve with desired toppings.
