Description

For the Seasoned Beef:

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/4 cup water

For the Pizza:

  • 8 small flour tortillas
  • 1 can (15 oz) refried beans
  • 1/2 cup enchilada sauce or taco sauce
  • 1 cup shredded Mexican blend cheese
  • 1 Roma tomato (diced)
  • 1/4 cup sliced black olives
  • 2 tablespoons sliced green onions
  • 2 tablespoons vegetable oil (for frying)


Instructions

  1. Prepare the Seasoned Beef: In a skillet over medium heat, cook the ground beef until browned, then drain excess fat. Stir in taco seasoning and water; simmer for 5 minutes until thickened.
  2. Fry the Tortillas: In a separate skillet, heat a thin layer of vegetable oil over medium-high heat. Lightly fry each tortilla for 1–2 minutes per side until crisp and golden. Drain on paper towels.
  3. Assemble the Pizza: Preheat oven to 400°F (200°C). Spread refried beans on four of the tortillas, then top each with seasoned beef. Place the remaining tortillas on top to form a ‘pizza’ sandwich. Spread enchilada or taco sauce over the top tortillas. Sprinkle with shredded cheese, then top with diced tomatoes, black olives, and green onions.
  4. Bake: Place on a baking sheet and bake for 8–10 minutes, or until the cheese is melted and bubbly. Slice and serve warm.

Notes

  • You can use ground turkey or vegetarian crumbles instead of beef.
  • Add jalapeños or hot sauce for extra spice.
