Chicken and Marinade

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, garlic powder, and crushed red pepper flakes if using. Reserve ¼ cup of this mixture to use later for glazing the chicken.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag or shallow dish. Season with salt and black pepper, then pour the remaining marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to penetrate.
  3. Preheat the Grill: Heat your grill to medium-high and lightly oil the grates with vegetable oil to prevent sticking.
  4. Grill the Chicken: Remove the chicken breasts from the marinade and place them on the grill. Cook for 5 to 6 minutes per side, until the internal temperature reaches 165°F and the chicken is cooked through.
  5. Glaze the Chicken: During the last 2 to 3 minutes of grilling, brush the chicken generously with the reserved sweet chili glaze to create a sticky, flavorful coating.
