Description

Sushi Bake is a delicious and easy-to-make casserole that mimics the flavors of sushi in a baked dish. Combining seasoned sushi rice with a creamy, spicy seafood mixture and topped with melted mozzarella cheese, it’s perfect for impressing guests or enjoying a flavorful family meal. Served with nori sheets for wrapping, this dish offers all the best sushi elements in a comforting, oven-baked form.

Ingredients

Scale

Rice Base

  • 2 cups sushi rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt

Seafood Mixture

  • 8 ounces cream cheese, softened
  • ½ cup mayonnaise
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 1 pound fresh sushi-grade salmon fillet, diced
  • 1 pound cooked shrimp, chopped (or other seafood of choice)
  • ½ cup green onions, sliced

Toppings and Garnish

  • ½ cup furikake (Japanese rice seasoning)
  • 1 cup shredded mozzarella cheese
  • Sesame seeds, for garnish
  • Nori sheets, for serving

Instructions

  1. Rinse the Rice: Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch, ensuring the rice cooks fluffy and separate.
  2. Cook the Rice: In a large pot, combine the rinsed rice with 2 ½ cups water. Bring to a boil over medium heat, then cover and reduce heat to low. Simmer for about 20 minutes until rice is cooked and water is absorbed. Remove from heat and let it sit covered for 10 minutes.
  3. Season the Rice: In a small bowl, stir together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice to infuse flavor while allowing the rice to cool slightly.
  4. Prepare the Seafood Mixture: In a mixing bowl, combine softened cream cheese, mayonnaise, sriracha sauce, diced salmon, chopped shrimp, and sliced green onions. Mix thoroughly until everything is evenly incorporated into a creamy, spicy seafood filling.
  5. Preheat Oven and Assemble: Preheat your oven to 350°F (175°C). Grease a baking dish, then evenly spread the seasoned sushi rice into the base. Layer the prepared seafood mixture evenly on top of the rice.
  6. Add the Cheese: Sprinkle shredded mozzarella cheese evenly over the seafood layer to ensure a rich, melty topping.
  7. Bake: Place the assembled dish in the preheated oven and bake for 30-35 minutes, or until the top is bubbly and golden brown.
  8. Cool and Garnish: Remove from oven and let the sushi bake cool for 10-15 minutes to set. Sprinkle sesame seeds and additional furikake over the top for flavor and presentation.
  9. Serve: Cut into squares or scoop portions into bowls. Serve warm with nori sheets on the side for wrapping each bite, mimicking the sushi experience.

Notes

  • You can customize the seafood mixture with your favorite sushi-grade seafood such as crab, scallops, or imitation crab.
  • Adjust the amount of sriracha to control the spice level to your preference.
  • Use freshly cooked rice for best results; leftover rice may become too firm.
  • This dish is great for gatherings as it can be made ahead and reheated.
  • For a dairy-free version, substitute cream cheese and mozzarella with vegan cheese alternatives.
