For the Dough

  • 4 1/4 cups (510 grams) all-purpose flour
  • 3/4 teaspoon salt
  • 1 1/2 cups (340 grams) unsalted butter, chilled and cut into 1” pieces
  • 2 tablespoons (30 grams) apple cider vinegar
  • 1/2 cup – 3/4 cup (80-120 grams) ice water
  • 2 teaspoons olive oil

For the Filling

  • 1/2 pound ground Italian sausage (about 2 links with casing removed)
  • 1 yellow onion, finely diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 1/2 cups pizza sauce (or 1 (14-ounce) jar)
  • 1 cup pepperoni, sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 1/2 cups shredded mozzarella cheese

For Assembly and Topping

  • Italian seasoning, for sprinkling
  • Parmesan cheese, for sprinkling
  • Egg wash (1 egg beaten with 1 tablespoon water)


Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled butter pieces and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs. Stir in the apple cider vinegar, then gradually add ice water, starting with 1/2 cup, mixing just until the dough comes together. Add more water if necessary. Form the dough into two discs, wrap in plastic, and chill in the refrigerator for at least 1 hour.
  2. Cook the Sausage and Vegetables: Heat olive oil in a skillet over medium heat. Add the ground Italian sausage and cook until browned and cooked through, breaking it up as it cooks. Remove and set aside. In the same skillet, sauté the diced onion, green bell pepper, and minced garlic until soft and fragrant, about 5 minutes. Return the sausage to the pan and stir to combine. Remove from heat.
  3. Prepare the Filling: Stir the pizza sauce, pepperoni slices, Italian seasoning, garlic powder, salt, and pepper into the cooked sausage and vegetable mixture. Allow the filling to cool slightly before assembly.
  4. Roll Out the Dough: On a lightly floured surface, roll out one dough disc into a large rectangle about 1/8-inch thick. Cut the dough into roughly 12 equal rectangles, depending on preferred hand pie size.
  5. Fill and Assemble the Hand Pies: Spoon an even amount of the cooled filling onto one half of each dough rectangle, leaving space around the edges. Sprinkle shredded mozzarella cheese over the filling. Brush the edges of the dough with egg wash, then fold the dough over the filling to create a sealed pocket. Press edges firmly with a fork to seal.
  6. Top and Prepare for Baking: Place the hand pies on a parchment-lined baking sheet. Brush the tops with egg wash, sprinkle lightly with Italian seasoning and Parmesan cheese. Cut small slits in the top of each hand pie to allow steam to escape.
  7. Bake: Preheat the oven to 375°F (190°C). Bake the hand pies for 25 to 30 minutes, or until crusts are golden brown and filling is hot. Remove from oven and let cool slightly before serving.

Notes

  • Make sure the filling cools before assembling the hand pies to prevent dough from getting soggy.
  • You can customize the filling with your favorite pizza toppings such as mushrooms, olives, or extra cheese.
