Ingredients
Scale
For the Sliders:
- 1 lb ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 8 slider buns
- 4 slices cheddar cheese (cut in half to fit sliders)
- 2 tablespoons butter (melted, for brushing the buns)
For the Street Corn Topping:
- 2 cups fresh or frozen corn kernels
- 1 tablespoon butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1/4 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 cup crumbled cotija cheese (or feta as substitute)
- 1 tablespoon chopped cilantro
- Optional: extra lime wedges for garnish
Instructions
- Preheat the Grill or Skillet: Preheat your grill or stovetop skillet over medium-high heat to get it ready for cooking the patties and toasting the buns.
- Season the Beef: In a mixing bowl, combine ground beef with garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix gently until just combined to avoid tough burgers.
- Form the Patties: Shape the beef mixture into 8-10 small slider patties. Make a slight indent in the center of each patty with your thumb to promote even cooking and prevent puffing up.
- Cook the Patties: Place the patties on the grill or skillet and cook for 3-4 minutes per side, or until they reach your preferred doneness. During the last minute on the heat, add a half slice of cheddar cheese on each patty and cover to melt the cheese thoroughly.
- Sauté the Corn: While patties cook, heat butter in a medium skillet over medium heat. Add corn kernels and sauté for approximately 5 minutes until corn is lightly browned and cooked through.
- Prepare the Street Corn Mixture: Remove the corn from heat and allow it to cool slightly. In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and smoked paprika. Fold the sautéed corn into this mixture until well combined.
- Toast the Buns: Brush the insides of the slider buns with melted butter and toast them on the grill or skillet for 1-2 minutes until golden and slightly crisp.
- Assemble the Sliders: Place the cooked patties with melted cheese on the bottom halves of the toasted buns. Spoon a generous amount of the street corn topping over each patty. Garnish with crumbled cotija cheese and chopped cilantro.
- Serve: Place the top buns on each slider and serve immediately, optionally accompanied by lime wedges for an extra burst of flavor.
Notes
- To prevent dry sliders, avoid overworking the ground beef when mixing.
- You can substitute cotija cheese with feta if unavailable.
- Adjust the chili powder amount for more or less heat in the street corn topping.
- For convenience, frozen corn kernels can be used; just thaw before cooking.
- Slider buns can be replaced with mini brioche buns for a richer taste.
- Adding fresh lime juice right before serving can brighten flavors even more.
