Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Shortcake: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk and vanilla until just combined.
- Bake Shortcake Bites: Scoop dough onto baking sheet and bake for 10–12 minutes until golden brown.
- Prepare Strawberry Topping: Toss diced strawberries with sugar and let sit to release juices.
- Assemble: Once cooled, slice shortcake bites, fill or top with strawberries and whipped cream. Serve immediately.
