Description

Delight in these rich and creamy Strawberry Dark Chocolate Truffles, featuring a luscious strawberry-infused ganache enveloped in a smooth dark chocolate coating. Perfectly balanced between tangy fruitiness and deep cocoa flavors, these elegant truffles make a sophisticated treat for any occasion.

Ingredients

Scale

Strawberry Ganache

  • 1 cup fresh strawberries, hulled and chopped

Chocolate Ganache

  • 8 oz dark chocolate (70% cocoa), chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup strawberry liquid (from cooked strawberries)

Coating

  • 8 oz dark chocolate (70% cocoa), chopped
  • Cocoa powder, for rolling (optional)
  • Freeze-dried strawberry powder, for rolling (optional)
  • Chopped pistachios or shredded coconut, for rolling (optional)

Instructions

  1. Make the Strawberry Ganache: Place the chopped strawberries in a small saucepan over medium heat. Cook for 5-6 minutes, mashing occasionally, until they release their juice and the mixture thickens. Strain the strawberry puree through a fine mesh sieve to remove seeds and pulp, leaving about 1/4 cup of strawberry liquid. Set aside.
  2. Prepare the Chocolate Ganache: In a heatproof bowl, combine the chopped dark chocolate and heavy cream. Heat in the microwave in 30-second intervals, stirring between each until smooth and melted. Stir in the strawberry liquid, butter, vanilla extract, and salt. Mix thoroughly until the ganache is smooth and fully combined.
  3. Chill the Ganache: Cover the bowl and refrigerate for about 2 hours or until the ganache firms enough to scoop comfortably.
  4. Form the Truffles: Once chilled, use a melon baller or spoon to scoop small portions of the ganache. Roll each portion into roughly 1-inch diameter balls with your hands. Place the formed truffles on a parchment-lined baking sheet.
  5. Coat the Truffles: Melt the second batch of chopped dark chocolate in a heatproof bowl over simmering water or microwave until smooth. Dip each truffle into the melted chocolate to evenly coat. Optionally, roll the coated truffles in cocoa powder, freeze-dried strawberry powder, chopped pistachios, or shredded coconut to add texture and flavor.
  6. Chill and Serve: Place the coated truffles back on the parchment-lined sheet and refrigerate for 30 minutes or until the chocolate coating is set. Serve chilled or at room temperature for the best flavor experience.

Notes

  • Use high-quality dark chocolate with at least 70% cocoa for best flavor.
  • Ensure the strawberry liquid is free of seeds for a smooth ganache texture.
  • For easier rolling, chill your hands or use gloves, as ganache can be sticky.
  • Customize coatings to your preference for diverse textures and flavor profiles.
  • Store truffles in an airtight container in the refrigerator for up to one week.
