Ingredients
Scale
Strawberries
- 2 pounds (900g) fresh strawberries, hulled and halved
- 1/3 cup (65g) granulated sugar
Butter
- 9 tablespoons (120g) unsalted butter
Batter
- 2¼ cups (270g) all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon kosher salt
- 2/3 cup (135g) granulated sugar
- 1¼ cups (300ml) milk
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to ensure it’s properly heated and ready for baking the cobbler.
- Macerate strawberries: In a large bowl, toss the halved strawberries with 1/3 cup of sugar. Stir well and let sit to release their natural juices and enhance their sweetness.
- Melt the butter: Place 9 tablespoons of unsalted butter in a 13×9-inch baking dish and put it in the preheated oven for about 10 minutes until the butter is fully melted.
- Prepare the batter: While the butter melts, whisk together the flour, baking powder, salt, and remaining 2/3 cup sugar in a medium bowl. Add the milk and vanilla extract, stirring gently just until combined—avoid overmixing to keep the batter light.
- Assemble the cobbler: Carefully remove the baking dish with melted butter from the oven. Pour the batter over the melted butter without stirring, then evenly spoon the macerated strawberries over the batter, leaving excess juice behind.
- Bake: Bake the cobbler in the oven for 55 to 60 minutes, until the topping is golden brown and the strawberry juices are bubbling around the edges.
- Cool and serve: Let the cobbler cool for 15 minutes to allow the juices to set. Serve warm, optionally with a scoop of vanilla ice cream for an extra treat.
Notes
- Do not stir the batter and strawberries once assembled in the dish; this creates the iconic cobbler texture.
- Allowing the strawberries to macerate enhances their flavor and juice release.
- Use fresh strawberries for best results, but frozen can be used if thawed and drained.
- Optional: serve with vanilla ice cream or whipped cream to complement the warm cobbler.
- Leftovers can be refrigerated for up to 3 days and gently reheated.
