Description

Delicious and refreshing Strawberry Breakfast Popsicles made with fresh strawberries, Greek yogurt, and a hint of honey for natural sweetness. These no-cook treats are perfect for a healthy, grab-and-go breakfast or a nourishing snack any time of the day.

Ingredients

Scale

Main Ingredients

  • 2 cups fresh strawberries, hulled
  • 1 cup plain Greek yogurt
  • 1/2 cup milk of choice
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granola

Instructions

  1. Prepare the Blend: Add the strawberries, Greek yogurt, milk, honey or maple syrup, and vanilla extract to a blender to combine all the primary flavors.
  2. Blend Smooth: Blend the mixture until smooth and creamy, stopping to scrape down the sides if necessary to ensure an even texture.
  3. Add Granola to Molds: Spoon a small amount of granola into the bottom of each popsicle mold to add a crunchy layer.
  4. Fill the Molds: Pour the strawberry yogurt mixture into the popsicle molds, leaving a small space at the top for expansion.
  5. Insert Sticks: Insert popsicle sticks into each mold and gently tap them to remove any trapped air bubbles, ensuring even freezing.
  6. Freeze: Place the molds in the freezer and freeze for at least 4 to 6 hours or until fully solidified.
  7. Unmold Popsicles: To release the popsicles, briefly run the molds under warm water and gently remove each popsicle for serving.

Notes

  • For extra nutrition, blend in a handful of spinach or chia seeds before freezing.
  • You can substitute strawberries with other berries like blueberries or raspberries.
  • Use vanilla yogurt instead of plain for a sweeter flavor variation.
