- Prep Ingredients: Cut the baby potatoes into halves or 1-inch chunks and the top sirloin steak into 1 1/2- to 2-inch pieces. Pat the steak dry to ensure proper searing.
- Mix Seasoning: In a small bowl, combine kosher salt, ground black pepper, onion powder, and garlic powder to create a seasoning mix for the potatoes.
- Cook Potatoes: Heat 1 tablespoon of butter and the olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer, flat-side down, and sprinkle half of the seasoning mix on top. Cook without moving for 4-5 minutes to develop a golden crust.
- Season Steak: While the potatoes cook, toss the steak chunks with the Montreal steak seasoning to evenly coat the meat.
- Finish Potatoes: Flip the potatoes and sprinkle the remaining seasoning on them. Continue cooking for another 4-5 minutes until the potatoes are tender and nicely browned. Remove potatoes from the pan and set aside.
