Description

For the Bake:

  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 5 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon chopped fresh basil or parsley (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch or 9×9-inch baking dish.
  2. Sauté onion and garlic: In a skillet over medium heat, warm the olive oil and sauté the onion until soft, about 3–4 minutes. Add the garlic and cook for another 30 seconds.
  3. Add spinach: Stir in the chopped spinach and cook until wilted, about 1–2 minutes. Remove from heat and let cool slightly.
  4. Prepare egg mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg. Stir in the ricotta, mozzarella, Parmesan, and spinach mixture.
  5. Bake: Pour the mixture into the prepared baking dish, smooth the top, and bake for 30–35 minutes or until set in the center and lightly golden.
  6. Cool and garnish: Let the bake cool for 5 minutes before slicing. Garnish with fresh herbs if desired.
