Description

This Spicy Pineapple Slaw is a vibrant and refreshing side dish combining shredded green and red cabbage with fresh pineapple and a kick of jalapeño and Fresno chile. Tossed in a zesty lime-honey dressing and fresh cilantro, it’s perfect for adding a sweet and spicy crunch to any meal.

Ingredients

Scale

Vegetables & Fruits

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup diced fresh pineapple
  • 4 radishes, thinly sliced
  • 1/2 cup fresh cilantro leaves
  • 1 jalapeño pepper, finely chopped (seeds removed for less heat)
  • 1 red Fresno chile, finely chopped
  • Zest and juice of 1 lime

Dressing & Seasoning

  • 1 tablespoon honey
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Combine Ingredients: In a large bowl, combine the shredded green cabbage, shredded red cabbage, diced pineapple, thinly sliced radishes, fresh cilantro leaves, finely chopped jalapeño (with seeds removed for less heat), and finely chopped red Fresno chile. Mix well to distribute ingredients evenly.
  2. Prepare Dressing: In a small bowl, whisk together the lime zest, lime juice, honey, salt, black pepper, and extra-virgin olive oil until well combined to create a tangy and sweet dressing.
  3. Toss Slaw: Pour the prepared dressing over the cabbage and pineapple mixture. Toss thoroughly to ensure every piece is coated with the flavorful dressing.
  4. Adjust Seasoning: Taste the slaw and adjust seasoning by adding additional salt, pepper, or honey as desired to balance the flavors perfectly.
  5. Chill Before Serving: Cover and refrigerate the slaw for at least 15 minutes before serving to allow the flavors to meld and the slaw to chill.

Notes

  • For less heat, remove seeds from the jalapeño and Fresno chile before chopping.
  • Use fresh pineapple for optimal sweetness and texture; canned pineapple may add excess moisture.
  • This slaw pairs well with grilled meats, tacos, or as a refreshing side dish.
  • Can be prepared a few hours ahead but best consumed within 24 hours for freshness.
