Description

Embark on a culinary adventure with this Spicy Korean Ramen recipe that brings the authentic flavors of Korea to your kitchen. This dish is a delightful blend of spicy, savory, and umami notes, perfect for warming up on a chilly day.

Ingredients

Scale

Ramen:

  • 2 packs Korean-style instant ramen (like Shin or Nongshim)
  • 4 cups water

Seasoning:

  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon gochugaru (Korean chili flakes)
  • 1/2 teaspoon sesame oil
  • 1 teaspoon soy sauce

Additional Ingredients:

  • 1/2 cup kimchi
  • 1/2 cup sliced shiitake mushrooms
  • 1/4 cup chopped green onions
  • 1 soft-boiled egg, halved
  • 1/2 cup baby spinach or bok choy
  • toasted sesame seeds and more green onions for garnish (optional)

Instructions

  1. Cook Ramen: Bring 4 cups of water to a boil in a medium saucepan. Cook ramen noodles according to package instructions, usually 4–5 minutes.
  2. Season and Simmer: While noodles cook, stir in gochujang, gochugaru, sesame oil, soy sauce, kimchi, mushrooms, and green onions. Simmer until mushrooms are tender and flavors are well combined, about 3–4 minutes.
  3. Add Greens and Serve: In the final minute, stir in spinach or bok choy until just wilted. Divide ramen and broth into bowls, top with soft-boiled egg halves, and garnish with sesame seeds and green onions. Serve hot.

Notes

  • Adjust spice level by reducing gochujang or gochugaru.
  • For extra richness, crack a raw egg into the hot broth while cooking.
  • Add sliced tofu or cooked chicken for more protein.
