Ingredients
Scale
Ramen:
- 2 packs Korean-style instant ramen (like Shin or Nongshim)
- 4 cups water
Seasoning:
- 1 tablespoon gochujang (Korean chili paste)
- 1 teaspoon gochugaru (Korean chili flakes)
- 1/2 teaspoon sesame oil
- 1 teaspoon soy sauce
Additional Ingredients:
- 1/2 cup kimchi
- 1/2 cup sliced shiitake mushrooms
- 1/4 cup chopped green onions
- 1 soft-boiled egg, halved
- 1/2 cup baby spinach or bok choy
- toasted sesame seeds and more green onions for garnish (optional)
Instructions
- Cook Ramen: Bring 4 cups of water to a boil in a medium saucepan. Cook ramen noodles according to package instructions, usually 4–5 minutes.
- Season and Simmer: While noodles cook, stir in gochujang, gochugaru, sesame oil, soy sauce, kimchi, mushrooms, and green onions. Simmer until mushrooms are tender and flavors are well combined, about 3–4 minutes.
- Add Greens and Serve: In the final minute, stir in spinach or bok choy until just wilted. Divide ramen and broth into bowls, top with soft-boiled egg halves, and garnish with sesame seeds and green onions. Serve hot.
Notes
- Adjust spice level by reducing gochujang or gochugaru.
- For extra richness, crack a raw egg into the hot broth while cooking.
- Add sliced tofu or cooked chicken for more protein.
