These beefy nacho grillers are cheesy and spicy and perfect for parties, gatherings, or added to the dinner rotation!

Spicy Fritos beefy nacho grillers are one of our go to recipes for when we want something different and delicious for dinner. It’s easy to make taco meat and fill your shells or top nacho chips with it but this recipe allows taco meat to be transformed into a yummy handheld meal that everyone enjoys. Easy to make and easy to clean up afterwards. A win win in my household.

I created this recipe after my husband introduced me to nacho grillers at Taco Bell and it tasted good but I wanted to learn how to make them at home because I am not a huge fan of Taco Bell these days. This is not a copycat recipe more like a recipe inspired by those grillers. I hope you enjoy this recipe of mine and use it time and time again!

Ingredients in Spicy Fritos Beefy Nacho Grillers

Ground beef– This is the meat of the dish and what most of the griller is composed of.

Taco seasoning packet– I always use the McCormick brand but feel free to use the brand you are most comfortable using. This is going to give your ground beef that perfect taco flavor that we are looking for.

Nacho cheese– I love the Tostitos Salsa Con Queso! It is my all time favorite nacho cheese whenever I am making these kinds of dishes.

Flamin’ Hot Fritos– This is going to add spiciness to the dish and texture with the crunch that it adds to the griller. As the griller sits or gets reheated these will soften. The crunch is there when they are freshly made.

Flour tortillas– I am a fan of the Mission Homestyle brand. Medium sized soft flour tortillas work the best with this dish.

Toppings and dippers– I like to dip mine in my favorite Pace Mild salsa and my husband likes to dip his in sour cream. As you can see I love Pace salsa and I am almost all out of this jar!

Tips for Better Spicy Fritos Beefy Nacho Grillers

  • Crush the Fritos in a sandwich bag so that they easily fit into the griller. With all the curls that they have they could cut through the soft tortillas.
  • If you are a lover of nacho cheese feel free to add an extra layer of it to your griller or add more to the taco meat.
  • You can add things like jalapeños, peppers, or even rice for more flavor and texture.
  • For more flavor, you can chop a small onion into fine pieces and add it when cooking the beef.
  • Cook on medium low heat because tortillas tend to grill fast. The first batch tends to cook slower than the rest so be careful not to burn them by checking

How to Make Spicy Fritos Beefy Nacho Grillers

  1. Cook the ground beef in a skillet and prepare it according to the taco seasoning packet instructions.
  2. After taco meat is ready, add nacho cheese and mix it all together.
  3. Place Fritos in a sandwich bag and crush them flat a few times. Leave some bigger pieces.
  4. Prepare the grillers by placing Fritos down the middle, then a layer of the taco mixture on top.
  5. Roll the top and bottom flaps and then the sides.
  6. Heat a skillet on medium low heat and coat with spray butter.
  7. Place the grillers seam side down and cook for a few seconds. Check to see how they look and when they are to your desired grilled look flip them. The first batch always cooks slower than the rest so keep that in mind.
  8. Let them cool then serve with salsa and sour cream.
  9. Enjoy!
