For the Ramen:

  • 1 package instant ramen noodles (any flavor, seasoning packet optional)
  • 1 tablespoon sesame oil

For the Cabbage Mixture:

  • 1 cup shredded green cabbage
  • 1/4 cup sliced green onions
  • 1 clove garlic (minced)
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 teaspoon gochujang or sriracha
  • 1/2 cup water

For Topping:

  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Cook the Ramen: Cook the ramen noodles according to package instructions, but undercook by 1 minute and discard or save the seasoning packet if not using. Drain and set aside.
  2. Sauté the Cabbage Mixture: In a skillet over medium heat, add sesame oil. Sauté the cabbage, green onions, and garlic for 2–3 minutes until softened slightly. Stir in the red pepper flakes, soy sauce, gochujang or sriracha, and water.
  3. Combine and Serve: Add the noodles back to the pan and toss to coat in the sauce and cabbage mixture. Sprinkle shredded mozzarella over the top and cover for 1–2 minutes until the cheese is melted. Serve hot, mixing the cheese in for a creamy texture.
