Pasta:
- 12 ounces rigatoni pasta
Sauce:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small shallot, minced
- 1 teaspoon red pepper flakes (adjust to taste)

- 1 (14 oz) can crushed tomatoes
- 1/2 cup tomato paste
- 1/3 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 cup fresh basil leaves, chopped, plus more for garnish
- Salt and black pepper, to taste
- Extra Parmesan for serving
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook rigatoni until al dente, then drain, reserving 1/2 cup of pasta water.
- Prepare the Sauce: In a skillet, heat olive oil. Sauté garlic and shallot until fragrant. Add red pepper flakes, smoked paprika, crushed tomatoes, and tomato paste. Simmer, then stir in cream and Parmesan. Let thicken.
- Combine and Serve: Add cooked pasta to the sauce. Toss to coat, adding basil. Adjust consistency with pasta water. Season and serve hot, garnished with basil and Parmesan.
