Instructions
- Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes. Add the spinach and cook until wilted if using fresh, or heated through if using frozen. Remove from heat and let cool for a few minutes.
- Mix the Filling: In a mixing bowl, combine the cooked spinach mixture with crumbled feta cheese, ricotta cheese, ground nutmeg (if using), salt, and pepper. Stir well to combine all ingredients evenly.
- Prepare the Puff Pastry: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the puff pastry sheet to smooth out any wrinkles, making it ready for filling.
- Assemble the Swirls: Spread the spinach and cheese filling evenly over the puff pastry sheet, leaving a small border around the edges. Carefully roll the pastry into a log or cylinder shape starting from one side.
