  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced

  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups cooked brown lentils
  • 2 cups tomato sauce
  • 1 cup water or vegetable broth

For the Lasagna:

  • 6 sheets no-boil lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper, to taste

Instructions

  1. Prepare Lentil Sauce: Heat olive oil in a large oven-safe skillet. Sauté onion until translucent. Add garlic, smoked paprika, oregano, and red pepper flakes. Cook until fragrant.
  2. Add Lentils and Noodles: Stir in lentils, tomato sauce, and water/broth. Simmer, then add lasagna noodles. Cover and cook until noodles are tender.
  3. Bake: Dollop ricotta over the noodles. Sprinkle mozzarella and Parmesan. Bake at 400°F for 10-12 minutes until bubbly and golden.
  4. Serve: Garnish with basil before serving.
