For the Lentil Sauce:
- 3 tablespoons Olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1 1/2 cups cooked brown lentils
- 2 cups tomato sauce
- 1 cup water or vegetable broth
For the Lasagna:
- 6 sheets no-boil lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and black pepper, to taste
Instructions
- Prepare Lentil Sauce: Heat olive oil in a large oven-safe skillet. Sauté onion until translucent. Add garlic, smoked paprika, oregano, and red pepper flakes. Cook until fragrant.
- Add Lentils and Noodles: Stir in lentils, tomato sauce, and water/broth. Simmer, then add lasagna noodles. Cover and cook until noodles are tender.
- Bake: Dollop ricotta over the noodles. Sprinkle mozzarella and Parmesan. Bake at 400°F for 10-12 minutes until bubbly and golden.
- Serve: Garnish with basil before serving.
