Description

This delicious Smashed Carrots recipe features tender boiled carrots that are smashed and roasted with olive oil and garlic powder for a crispy, flavorful side dish. Garnished with fresh herbs, it’s a simple and healthy way to elevate everyday carrots into a crowd-pleasing treat.

Ingredients

Scale

Carrots

  • 1 lb carrots (about 4-5 medium-sized)

Seasoning & Garnish

  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp freshly cracked black pepper
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Prepare Carrots: Wash, peel, and cut the carrots into 3-inch pieces to ensure even cooking.
  2. Boil Carrots: Place the carrot pieces in salted boiling water and cook for about 15 minutes, or until they become fork-tender.
  3. Drain and Smash: Drain the carrots well and arrange them on a parchment-lined baking sheet. Gently smash each piece using a fork or potato masher until flattened but still in one piece.
  4. Season: Drizzle the smashed carrots with extra virgin olive oil and sprinkle garlic powder, sea salt, and freshly cracked black pepper evenly over them. Toss gently to coat all pieces thoroughly.
  5. Roast: Preheat the oven to 425°F (220°C) and roast the carrots for 20-25 minutes until they turn golden brown and slightly crispy, flipping the pieces halfway through the cooking time for even roasting.
  6. Garnish and Serve: Remove from the oven and garnish with fresh parsley or thyme before serving warm for a flavorful and healthy side dish.

Notes

  • Boiling the carrots until tender before smashing ensures the inside remains soft while the outside crisps up during roasting.
  • You can use other herbs such as rosemary or chives if preferred.
  • For extra flavor, add a squeeze of lemon juice or a sprinkle of parmesan cheese after roasting.
  • This recipe can easily be doubled or tripled for larger groups.
  • Leftover smashed carrots can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
