Ingredients
Scale
Carrots
- 1 lb carrots (about 4-5 medium-sized)
Seasoning & Garnish
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- ½ tsp sea salt
- ¼ tsp freshly cracked black pepper
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Prepare Carrots: Wash, peel, and cut the carrots into 3-inch pieces to ensure even cooking.
- Boil Carrots: Place the carrot pieces in salted boiling water and cook for about 15 minutes, or until they become fork-tender.
- Drain and Smash: Drain the carrots well and arrange them on a parchment-lined baking sheet. Gently smash each piece using a fork or potato masher until flattened but still in one piece.
- Season: Drizzle the smashed carrots with extra virgin olive oil and sprinkle garlic powder, sea salt, and freshly cracked black pepper evenly over them. Toss gently to coat all pieces thoroughly.
- Roast: Preheat the oven to 425°F (220°C) and roast the carrots for 20-25 minutes until they turn golden brown and slightly crispy, flipping the pieces halfway through the cooking time for even roasting.
- Garnish and Serve: Remove from the oven and garnish with fresh parsley or thyme before serving warm for a flavorful and healthy side dish.
Notes
- Boiling the carrots until tender before smashing ensures the inside remains soft while the outside crisps up during roasting.
- You can use other herbs such as rosemary or chives if preferred.
- For extra flavor, add a squeeze of lemon juice or a sprinkle of parmesan cheese after roasting.
- This recipe can easily be doubled or tripled for larger groups.
- Leftover smashed carrots can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
