Enhanced with aromatic spices and garnished with fresh green onions, cilantro, and lime wedges, it’s a perfect bowl of warming noodles that’s easy to prepare and satisfying for any meal.

Ingredients

Scale

Beef and Broth

  • 1 lb (450g) beef chuck roast, cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 4 cups beef broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional, for depth of flavor)
  • 1 tablespoon brown sugar
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for browning the beef)
  • 4 cups water

Noodles and Garnishes

  • 2 packages ramen noodles (discard the seasoning packet)
  • 1 tablespoon sesame oil (optional, for flavor)
  • 1/2 cup chopped green onions, for garnish
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Brown the Beef: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the cubed beef chuck and brown on all sides until a deep golden crust forms. This step helps to develop rich flavor in the final dish. Set the browned beef aside.
  2. Prepare the Slow Cooker: In the slow cooker, add chopped onion, minced garlic, curry powder, ground ginger, turmeric, and cumin. Stir to combine and release the spice aromas.
  3. Add Liquids and Beef: Pour in beef broth, coconut milk, soy sauce, fish sauce (if using), brown sugar, and 4 cups of water into the slow cooker with the spices. Stir well. Add the browned beef chunks to the mixture and season with salt and pepper to taste.
  4. Cook in the Slow Cooker: Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the beef is very tender and the flavors are well blended.
  5. Cook the Ramen Noodles: About 10 minutes before serving, bring a pot of water to a boil. Cook the ramen noodles according to package instructions, discarding the seasoning packets. Drain and toss with sesame oil if using to prevent sticking and add flavor.
  6. Assemble the Dish: Remove the beef chunks from the slow cooker and shred or leave in pieces as desired. Stir the noodles directly into the slow cooker broth or serve noodles in bowls and ladle the curry beef broth over them.
  7. Serve: Garnish each serving with chopped green onions, fresh cilantro leaves, and a wedge of lime on the side for squeezing. Enjoy this hearty and aromatic slow cooker curry ramen while hot.

Notes

  • Discard the ramen seasoning packets as the curry broth provides sufficient flavor.
  • Fish sauce is optional but adds depth and umami to the curry broth.
  • Adjust the level of curry powder depending on your preferred spice level.
  • For a richer broth, use full-fat coconut milk.
  • If you prefer, you can cook the noodles separately and serve broth and noodles together to avoid overcooking.
