Description

A rich and flavorful Slow-Cooker Beef Curry combining tender beef stew meat with aromatic spices, creamy coconut milk, and hearty vegetables. This easy Indian-inspired recipe slowly simmers beef, potatoes, carrots, and spices to create a comforting, savory dish perfect for weeknight dinners or meal prepping.

Ingredients

Scale

Main Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 medium potatoes, diced
  • 3 carrots, sliced
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons red curry paste
  • 1 tablespoon curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lime juice
  • ¼ cup chopped cilantro, for serving

Instructions

  1. Prepare Ingredients: Chop the onion, mince the garlic, grate the fresh ginger, dice the potatoes, and slice the carrots to ensure all ingredients are ready for the slow cooker.
  2. Combine in Slow Cooker: Place the beef stew meat, onion, garlic, ginger, diced potatoes, and sliced carrots into the slow cooker. Add the red curry paste, curry powder, garam masala, salt, and pepper to the pot.
  3. Add Liquids and Stir: Pour in the coconut milk, diced tomatoes (with juices), and beef broth over the ingredients. Stir gently to combine all spices and liquids evenly.
  4. Slow Cook: Cover the slow cooker and cook on low heat for 7 to 8 hours or on high heat for 4 to 5 hours until the beef is fork-tender and the vegetables are soft.
  5. Finish and Adjust Seasoning: Once cooked, stir in the lime juice. Taste the curry and adjust seasoning with additional salt or pepper as needed.
  6. Serve: Ladle the beef curry into bowls and garnish with chopped cilantro. Serve warm over rice or with warm naan bread.

Notes

  • Serve over steamed rice or with warm naan bread for a complete meal.
  • For extra vegetables, add peas or spinach during the last 20 minutes of cooking.
  • Use light coconut milk to reduce fat content without sacrificing creaminess.
  • This dish can be prepared ahead and tastes even better the next day as flavors meld.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
