Ingredients
Scale
Bread and Spreads
- 2 slices rye bread
- 2 tablespoons Russian dressing (or Thousand Island dressing)
Filling
- 1/2 lb corned beef (thinly sliced)
- 2 slices Swiss cheese
- 1/4 cup sauerkraut, drained
For Grilling
- 1 tablespoon unsalted butter
- 1 teaspoon olive oil (optional, for extra crispiness)
Instructions
- Prepare the Sandwich: Spread Russian dressing evenly on one side of each slice of rye bread. On one slice, place a slice of Swiss cheese, then add a generous layer of thinly sliced corned beef. Layer the drained sauerkraut over the beef, then top with the second slice of Swiss cheese. Place the second slice of bread on top, dressing side down, to complete the sandwich.
- Heat the Skillet: Preheat a large skillet or griddle over medium heat. Add the unsalted butter and optional olive oil, allowing them to melt completely and coat the surface for even grilling and a golden crust.
- Grill the Reuben: Carefully place the assembled sandwich in the skillet. Cook for approximately 4-5 minutes on the first side, pressing down gently with a spatula to ensure even crisping. Flip the sandwich once the bottom is golden brown and the cheese begins to melt. Continue grilling the other side for another 4-5 minutes until it is golden, crispy, and the cheese is fully melted.
- Serve: Remove the sandwich from the skillet and let it rest for a minute to set. Slice it in half diagonally or down the middle, then serve immediately while warm and gooey.
Notes
- For extra crispiness, the addition of olive oil alongside butter is recommended but optional.
- Sauerkraut should be well-drained to prevent the sandwich from becoming soggy.
- Russian dressing can be substituted with Thousand Island dressing if preferred.
- Using fresh rye bread enhances the flavor and texture of the sandwich.
- Pressing the sandwich gently during cooking helps the ingredients meld together and the bread to toast evenly.
