Instructions

  1. MAKE MARINADE/SAUCE: Combine the soy sauce, honey (or maple syrup), lime zest, fresh lime juice, minced garlic, grated ginger, vegetable oil, Sriracha sauce, and kosher salt in a bowl. Whisk or blend these ingredients thoroughly to create a smooth marinade and sauce.
  2. MARINATE CHICKEN: Place the chicken thigh pieces in a large bowl or resealable bag and pour in half of the prepared marinade. Mix well to coat all the chicken thoroughly. Let the chicken marinate for 30 minutes at room temperature or refrigerate for 6 to 12 hours for deeper flavor infusion.
  3. GLAZE (OPTIONAL): Reserve the other half of the marinade. If you want a thicker glaze to baste the chicken while grilling, combine the reserved marinade with 1/2 teaspoon cornstarch in a small saucepan. Heat gently, stirring constantly until the sauce thickens.
