Instructions
- Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Sauté garlic and shrimp: In a large skillet over medium heat, heat olive oil and 2 tablespoons of butter. Add the garlic and red pepper flakes, cooking until fragrant, about 1 minute. Add the shrimp and cook for 1–2 minutes per side until pink and opaque. Remove the shrimp and set aside.
- Deglaze the pan: Pour in the white wine or broth and lemon juice, scraping up any browned bits from the bottom of the pan. Let simmer for 2–3 minutes.
- Finish the dish: Reduce heat to low and stir in the remaining butter. Return the shrimp to the pan, add the cooked pasta and a splash of reserved pasta water if needed. Toss everything to coat well. Remove from heat, stir in fresh parsley, and serve with lemon wedges.
Notes
- Use fresh or frozen shrimp, but make sure they’re fully thawed and patted dry before cooking.
- Add more red pepper flakes if you prefer extra heat.
- For a dairy-free version, replace butter with more olive oil.
