Description

Indulge in a classic Italian-American seafood favorite with this flavorful Shrimp Scampi with Pasta recipe. Succulent shrimp, garlic, butter, and white wine come together to create a delectable dish that is perfect for a cozy dinner at home.

Ingredients

Linguine or Spaghetti:

12 oz

Large Shrimp (peeled and deveined):

1 lb

Olive Oil:

3 tablespoons

Unsalted Butter:

4 tablespoons

Garlic Cloves (minced):

4

Red Pepper Flakes (optional):

1/4 teaspoon

Dry White Wine or Chicken Broth:

1/2 cup

Fresh Lemon Juice:

2 tablespoons

Chopped Fresh Parsley:

1/4 cup

Salt and Black Pepper:

to taste

Lemon Wedges:

for serving

Instructions

  1. Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Sauté garlic and shrimp: In a large skillet over medium heat, heat olive oil and 2 tablespoons of butter. Add the garlic and red pepper flakes, cooking until fragrant, about 1 minute. Add the shrimp and cook for 1–2 minutes per side until pink and opaque. Remove the shrimp and set aside.
  3. Deglaze the pan: Pour in the white wine or broth and lemon juice, scraping up any browned bits from the bottom of the pan. Let simmer for 2–3 minutes.
  4. Finish the dish: Reduce heat to low and stir in the remaining butter. Return the shrimp to the pan, add the cooked pasta and a splash of reserved pasta water if needed. Toss everything to coat well. Remove from heat, stir in fresh parsley, and serve with lemon wedges.

Notes

  • Use fresh or frozen shrimp, but make sure they’re fully thawed and patted dry before cooking.
  • Add more red pepper flakes if you prefer extra heat.
  • For a dairy-free version, replace butter with more olive oil.
