Ingredients
Scale
Shrimp and Protein
- 7 oz medium shrimp, peeled and deveined
- 2 large eggs
Vegetables
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 scallions, sliced
- Extra sliced scallions (optional, for garnish)
Grains
- 2 cups cooked jasmine rice, chilled (preferably day-old)
Seasonings and Oils
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 1/2 tsp ground white pepper
- 1 tbsp vegetable oil
- Toasted sesame seeds (optional, for garnish)
Instructions
- Heat oil: Warm 1 tablespoon of vegetable oil in a large nonstick skillet or wok over medium-high heat to prepare the pan for cooking.
- Cook shrimp: Add the peeled and deveined shrimp to the hot pan and sauté for 2 to 3 minutes until they turn pink and are just cooked through. Remove the shrimp from the pan and set aside to prevent overcooking.
- Scramble eggs: Pour the beaten eggs into the same pan and scramble them quickly until they are just set. Push the eggs to one side of the pan to make space for the vegetables.
- Cook vegetables: Add the frozen mixed vegetables to the pan and cook for about 1 minute until they are heated through but still retain some crunch.
- Combine rice: Add the chilled cooked jasmine rice to the pan, breaking up any clumps with a spatula. Stir-fry the mixture for 2 minutes to ensure the rice is fully combined and heated evenly.
- Add shrimp and seasonings: Return the cooked shrimp to the pan. Stir in the soy sauce, oyster sauce if using, sesame oil, and ground white pepper. Mix thoroughly to coat all ingredients evenly with the sauces and seasoning.
- Finish with scallions: Add the sliced scallions and stir-fry everything together for an additional 1 minute to blend the flavors and slightly soften the scallions.
- Serve: Taste the fried rice and adjust the seasoning if needed. Serve the shrimp fried rice hot, garnished with extra sliced scallions and toasted sesame seeds if desired for an added crunch and flavor.
Notes
- Day-old rice works best for fried rice because it is drier and less likely to clump or become mushy.
- Use medium shrimp for balanced texture and flavor; large shrimp can be used but may require longer cooking time.
- Oyster sauce is optional but adds a deeper umami flavor; omit for a milder taste.
- If you don’t have sesame oil, a few drops of toasted sesame seeds can add a similar aroma when garnishing.
- Adjust soy sauce quantity depending on your salt preference and soy sauce type (low sodium or regular).
- To add heat, consider a pinch of red pepper flakes or a dash of chili oil.
