Mushrooms:

Vegetable oil:
2 tablespoons
Garlic:
3 cloves, minced
Ginger:
1 teaspoon, grated fresh
Soy sauce:
3 tablespoons low-sodium
Oyster sauce:
1 tablespoon
Rice vinegar:
1 tablespoon
Cornstarch mixture:
1 teaspoon cornstarch mixed with 1 tablespoon water
Black pepper:
1/4 teaspoon
Red pepper flakes:
1/4 teaspoon (optional)
Green onions or cilantro:
2 tablespoons sliced for garnish
Instructions
- Prepare the Sauce: Whisk together soy sauce, oyster sauce, rice vinegar, and cornstarch-water mixture. Set aside.
- Cook the Shrimp: Heat 1 tablespoon of oil in a skillet, cook shrimp for 1–2 minutes per side. Remove and set aside.
- Stir-Fry Vegetables: Add remaining oil, stir-fry asparagus and mushrooms for 4–5 minutes. Add garlic and ginger, stir-fry for 30 seconds.
- Combine Ingredients: Return shrimp to the pan, pour in the sauce. Stir-fry for 1–2 minutes until thickened and coated.
- Season and Serve: Season with black pepper and red pepper flakes. Garnish with green onions or cilantro. Serve hot over rice or noodles.
