Description

This Shrimp and Asparagus Stir Fry is a quick and flavorful dish combining tender shrimp with crisp asparagus in a savory ginger-garlic sauce, perfect for a healthy weeknight dinner served over fragrant jasmine rice.

Ingredients

Scale

Shrimp and Vegetables

  • 1 pound 16/20 count shrimp, deveined and deshelled
  • 1 pound asparagus, cut 1½ inches diagonally with bottom 1 inch removed and discarded
  • 1½ tablespoons ginger, minced
  • 1½ tablespoons garlic, minced
  • ¼ teaspoon red chili flakes
  • ¼ teaspoon Kosher salt (Diamond Crystal brand), plus more to taste

Oils and Sauces

  • 2½ tablespoons avocado oil, divided
  • 1 tablespoon plus 1 teaspoon oyster sauce
  • ¼ cup water

Accompaniment

  • Jasmine rice, for serving

Instructions

  1. Sauté garlic: Heat 1¼ tablespoons avocado oil in a wok or skillet over medium-high heat. Add minced garlic and sauté for one minute until fragrant.
  2. Cook shrimp: Add shrimp, red chili flakes, and ¼ teaspoon kosher salt to the wok. Cook shrimp until they turn pink but are slightly undercooked, about 2-3 minutes. Remove shrimp and garlic from wok and place in a bowl. Set aside.
  3. Cook ginger and asparagus: Add remaining 1¼ tablespoons avocado oil and minced ginger to the wok. Cook for one minute. Add asparagus and stir constantly for 2 minutes until crisp-tender.
  4. Combine and finish cooking: Return shrimp and garlic mixture to the wok with asparagus. Cook together for an additional 2 minutes.
  5. Add sauce and reduce: Stir in oyster sauce and ¼ cup water. Cook until the liquid slightly reduces and asparagus reaches desired texture.
  6. Serve: Serve the stir fry immediately over cooked jasmine rice.

Notes

  • For extra flavor, garnish with chopped green onions or sesame seeds.
  • Adjust red chili flakes according to your preferred spice level.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
  • Substitute oyster sauce with vegetarian stir fry sauce for a vegetarian option.
  • Jasmine rice pairs well, but you can use brown rice or quinoa for a healthier alternative.
