- 1 pound asparagus, cut 1½ inches diagonally with bottom 1 inch removed and discarded
- 1½ tablespoons ginger, minced
- 1½ tablespoons garlic, minced
- ¼ teaspoon red chili flakes
- ¼ teaspoon Kosher salt (Diamond Crystal brand), plus more to taste
Oils and Sauces
- 2½ tablespoons avocado oil, divided
- 1 tablespoon plus 1 teaspoon oyster sauce
- ¼ cup water
Accompaniment
- Jasmine rice, for serving
Instructions
- Sauté garlic: Heat 1¼ tablespoons avocado oil in a wok or skillet over medium-high heat. Add minced garlic and sauté for one minute until fragrant.
- Cook shrimp: Add shrimp, red chili flakes, and ¼ teaspoon kosher salt to the wok. Cook shrimp until they turn pink but are slightly undercooked, about 2-3 minutes. Remove shrimp and garlic from wok and place in a bowl. Set aside.
- Cook ginger and asparagus: Add remaining 1¼ tablespoons avocado oil and minced ginger to the wok. Cook for one minute. Add asparagus and stir constantly for 2 minutes until crisp-tender.
- Combine and finish cooking: Return shrimp and garlic mixture to the wok with asparagus. Cook together for an additional 2 minutes.
- Add sauce and reduce: Stir in oyster sauce and ¼ cup water. Cook until the liquid slightly reduces and asparagus reaches desired texture.
- Serve: Serve the stir fry immediately over cooked jasmine rice.
Notes
- For extra flavor, garnish with chopped green onions or sesame seeds.
- Adjust red chili flakes according to your preferred spice level.
- Make sure not to overcook the shrimp to keep them tender and juicy.
- Substitute oyster sauce with vegetarian stir fry sauce for a vegetarian option.
- Jasmine rice pairs well, but you can use brown rice or quinoa for a healthier alternative.
