Soup Base
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 cups diced tomatoes
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
For Serving
- Mashed potatoes, for serving
- Chopped fresh parsley, for garnish
Instructions
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery and cook, stirring occasionally, until tender and translucent, about 5-7 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Brown Ground Beef: Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink, about 8 minutes. Drain excess fat if necessary.
- Incorporate Tomato Paste: Stir in the tomato paste and cook for 2 minutes to deepen its flavor, coating the beef and vegetables well.
- Add Liquids and Vegetables: Pour in the beef broth, diced tomatoes, and frozen peas. Sprinkle in dried thyme and dried rosemary. Stir to combine.
- Simmer Soup: Bring the soup to a boil, then reduce heat to low and let it simmer gently for 15-20 minutes, allowing flavors to meld together.
- Season: Taste and season with salt and freshly ground black pepper according to your preference.
- Serve: Ladle the hot soup into bowls, topping each with a generous dollop of creamy mashed potatoes. Garnish with chopped fresh parsley for a vibrant finish.
Notes
- You can prepare the mashed potatoes in advance or use leftover mashed potatoes for convenience.
- For a richer flavor, use homemade beef broth or low-sodium beef broth to control the salt level.
- Feel free to add other vegetables like corn or green beans based on your preference.
- To make this soup dairy-free, use non-dairy mashed potatoes or omit the butter and milk in your mashed potatoes preparation.
- Ground lamb can be substituted for beef to give a more traditional shepherd’s pie flavor.
