Description

Shepherd’s Pie Soup is a comforting and hearty dish that captures all the flavors of traditional shepherd’s pie in a warm, easy-to-make soup form. Packed with ground beef, vegetables, and herbs, and topped with creamy mashed potatoes and fresh parsley, this soup is perfect for cozy dinners.

Ingredients

Scale

Soup Base

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

For Serving

  • Mashed potatoes, for serving
  • Chopped fresh parsley, for garnish

Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery and cook, stirring occasionally, until tender and translucent, about 5-7 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
  3. Brown Ground Beef: Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink, about 8 minutes. Drain excess fat if necessary.
  4. Incorporate Tomato Paste: Stir in the tomato paste and cook for 2 minutes to deepen its flavor, coating the beef and vegetables well.
  5. Add Liquids and Vegetables: Pour in the beef broth, diced tomatoes, and frozen peas. Sprinkle in dried thyme and dried rosemary. Stir to combine.
  6. Simmer Soup: Bring the soup to a boil, then reduce heat to low and let it simmer gently for 15-20 minutes, allowing flavors to meld together.
  7. Season: Taste and season with salt and freshly ground black pepper according to your preference.
  8. Serve: Ladle the hot soup into bowls, topping each with a generous dollop of creamy mashed potatoes. Garnish with chopped fresh parsley for a vibrant finish.

Notes

  • You can prepare the mashed potatoes in advance or use leftover mashed potatoes for convenience.
  • For a richer flavor, use homemade beef broth or low-sodium beef broth to control the salt level.
  • Feel free to add other vegetables like corn or green beans based on your preference.
  • To make this soup dairy-free, use non-dairy mashed potatoes or omit the butter and milk in your mashed potatoes preparation.
  • Ground lamb can be substituted for beef to give a more traditional shepherd’s pie flavor.
