Instructions

  1. Prepare the Oven and Baking Sheet: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Aromatics: In a skillet over medium heat, heat the olive oil. Add the finely chopped onion and cook for 2–3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Cook the Meat Filling: Add the ground beef or turkey to the skillet and cook until browned, breaking it apart with a spoon for even cooking. Season with salt, black pepper, dried thyme, and smoked paprika. Stir in the tomato paste until combined.
  4. Simmer the Filling: Pour in the beef or vegetable broth and allow the mixture to simmer for 3–4 minutes to develop flavor and thicken slightly. Stir in the thawed peas and carrots, then remove from heat and let the filling cool slightly to make assembly easier.
  5. Assemble the Hand Pies: Unroll the pie crusts on a flat surface and cut out circles about 4–5 inches wide. Place a heaping tablespoon of the cooled filling onto one side of each circle. Fold the dough over to create a half-moon shape and press the edges together with a fork to seal completely.
  6. Brush with Egg Wash: Brush the tops of each hand pie with the beaten egg to promote a golden, glossy finish during baking.
