Sausage Filling:
- 1 pound ground pork sausage
- 1/2 cup breadcrumbs
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, beaten (divided)
- 1 tablespoon Dijon mustard (optional)
Assembly:
- 1 sheet puff pastry, thawed if frozen
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the filling: In a large bowl, combine the ground sausage, breadcrumbs, onion, garlic, thyme, sage, salt, pepper, half of the beaten egg, and Dijon mustard (if using). Mix until fully combined.
- Assemble the rolls: Roll out the puff pastry on a lightly floured surface and cut in half lengthwise. Divide the sausage mixture in half and form two long logs down the center of each pastry strip. Fold the pastry over the sausage and seal the edges. Brush with egg wash.
- Bake: Slice each roll and place on the baking sheet. Bake for 20–25 minutes until golden brown and cooked through. Let cool slightly before serving.

- You can use spicy sausage for a kick or add chopped herbs like parsley for freshness.
- These can be made ahead and frozen unbaked—just thaw slightly before baking.
