Description

Sausage Griddlers are a delicious and easy-to-make snack featuring spicy breakfast sausage wrapped in flaky puff pastry. Perfectly golden and crispy on the outside with juicy, flavorful sausage inside, these savory treats are ideal for breakfast, brunch, or a party appetizer.

Ingredients

Scale

Sausage Mixture

  • 400g spicy breakfast sausage (or your favorite sausage)
  • 1/2 tsp dried thyme or sage (optional)

Pastry and Finish

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash and sealing)
  • Mustard or ketchup for serving (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking and ensure even baking.
  2. Prepare the sausage: Divide the 400g of spicy breakfast sausage into 8 equal portions. Shape each portion into small sausage links or patties depending on your preference.
  3. Cut the pastry: Roll out the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 8 rectangles, each large enough to fully encase one sausage portion.
  4. Assemble the griddlers: Place each sausage onto a pastry rectangle. Sprinkle thyme or sage over the sausage if you choose to use these herbs for added flavor.
  5. Wrap and seal: Wrap the pastry around each sausage, folding the edges over and pressing gently to seal. Use a little beaten egg along the edges to help the pastry adhere and prevent openings during baking.
  6. Prepare for baking: Arrange the wrapped sausages seam-side down on the prepared baking tray to keep them sealed.
  7. Add egg wash: Brush the tops of each wrapped sausage with the beaten egg. This step creates a shiny, golden-brown finish on the puff pastry once baked.
  8. Bake: Place the baking tray in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up, golden brown, and cooked through.
  9. Serve: Serve the sausage griddlers warm accompanied by mustard or ketchup if desired for dipping.

Notes

  • You can use any type of sausage you prefer, including mild, spicy, or vegetarian options (adjust cooking time if needed).
  • Thyme and sage are optional but add a lovely herbal aroma and flavor.
  • Be sure to seal the pastry edges well with egg wash to prevent leakage during baking.
  • For a crispier pastry, avoid overcrowding the baking tray so air can circulate evenly.
  • Leftovers can be refrigerated and reheated in the oven for best texture retention.
