  • 1 pound Italian sausage links

Vegetables & Seasonings

  • 3 medium bell peppers (different colors), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced

  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

  • 4 hoagie rolls, split lengthwise


Instructions

  1. Cook Sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the Italian sausage links and cook until browned on all sides, about 8-10 minutes. Remove sausages from skillet and set aside. Optionally, slice sausages into pieces for easier sandwich assembly.
  2. Sauté Vegetables: Add the remaining tablespoon of olive oil to the same skillet. Add the sliced bell peppers and onions. Cook, stirring occasionally, until the vegetables start to soften, about 5-7 minutes.
  3. Add Spices and Sausages: Stir in the minced garlic, dried oregano, dried basil, salt, and black pepper into the skillet with the vegetables. Cook for another 1-2 minutes until the garlic is fragrant. Return the browned sausages to the skillet and continue cooking until the sausages are fully cooked through and the vegetables are tender, about 5 more minutes.
  4. Assemble Sandwiches: If desired, toast the hoagie rolls lightly to add crunch and warmth. Fill each hoagie roll generously with the sausage and pepper mixture. Serve hot and enjoy your flavorful sandwich.
