Description

A flavorful and hearty dish featuring tender roasted sweet potatoes, savory Italian sausage, and vibrant sautéed peppers and onions, all tossed in a sweet and tangy honey garlic sauce. Perfect for a comforting weeknight meal that balances sweetness and spice.

Ingredients

Scale

Sausage and Vegetables

  • 1 pound Italian sausage (sweet or spicy)
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced

Honey Garlic Sauce

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Roast Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast in the oven for about 20 minutes, until tender and caramelized.
  3. Cook Sausage: While the potatoes roast, heat a large skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked through, breaking it into smaller pieces as it cooks. Remove from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the chopped onion and bell peppers. Sauté for 5 to 7 minutes until the vegetables are soft and starting to caramelize.
  5. Add Garlic: Stir in the minced garlic and cook for an additional 1 to 2 minutes until fragrant, being careful not to burn the garlic.
  6. Make Sauce: In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and ground ginger to create the honey garlic sauce.
  7. Combine Sauce and Vegetables: Pour the sauce over the sautéed vegetables in the skillet and stir well to coat everything evenly.
  8. Add Sausage: Return the cooked sausage to the skillet and stir to combine with the vegetables and sauce. Cook together for 2 to 3 minutes to let the flavors meld.
  9. Add Sweet Potatoes: Add the roasted sweet potatoes to the skillet. Gently toss all ingredients to combine and cook for an additional 2 minutes to heat through.
  10. Garnish and Serve: Remove from heat, sprinkle with freshly chopped parsley, and serve warm for a deliciously balanced meal.

Notes

  • You can substitute turkey or chicken sausage for a leaner option.
  • Adjust the sweetness of the sauce by adding more or less honey as per your taste.
  • For a gluten-free dish, use tamari instead of soy sauce.
  • Serve over rice or quinoa to make it a more filling meal.
  • Leftovers store well in the refrigerator for up to 3 days.
