- 1 tablespoon olive oil
- 1 pound smoked sausage (sliced into 1/2-inch rounds)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups green cabbage (shredded)
- 3 medium carrots (sliced)
- 2 medium potatoes (diced)
- 1 can (14.5 oz) diced tomatoes (with juice)
- 4 cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley (for garnish, optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook for 4–5 minutes until browned. Remove sausage and set aside.
- In the same pot, add the onion and garlic, sauté for 2–3 minutes until fragrant. Stir in the cabbage and carrots, cook for 5 minutes until cabbage wilts.
- Add potatoes, diced tomatoes, chicken broth, paprika, thyme, bay leaf, salt, and pepper. Return sausage to the pot, stir well.
- Bring to a boil, then simmer uncovered for 30–35 minutes until vegetables are tender and flavors blend. Remove bay leaf, adjust seasoning, garnish with parsley before serving.
Notes
- This stew tastes even better the next day after the flavors meld.
- For a spicier version, use hot sausage or add red pepper flakes.
- Add a splash of apple cider vinegar at the end for a tangy finish.
