This Asian-inspired Salad with a flavorful dressing is a refreshing and vibrant dish that can be enjoyed as a light meal or a side. Packed with colorful vegetables and a delicious sesame dressing, it’s a perfect blend of textures and flavors.

Ingredients

Scale

Salad:

  • 4 cups mixed greens
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper (thinly sliced)
  • 1/2 cup edamame (cooked and shelled)
  • 1/4 cup chopped green onions
  • 1/4 cup sliced almonds
  • 1 tablespoon sesame seeds

Dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 1 garlic clove (minced)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Salad: In a large salad bowl, combine the mixed greens, red cabbage, carrots, bell pepper, edamame, green onions, almonds, and sesame seeds.
  2. Make the Dressing: In a small bowl or jar, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, garlic, and olive oil until fully combined.
  3. Assemble: Just before serving, pour the dressing over the salad and toss gently to coat all the ingredients evenly.

Notes

  • Add grilled chicken, shrimp, or tofu to make it a complete meal.
  • For a spicier kick, add a dash of sriracha or red pepper flakes to the dressing.
  • Dressing can be made ahead and stored in the fridge for up to 5 days.
