Cookies:
- 1 cup (2 sticks) unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups desiccated coconut
Chocolate Filling:
- 8 oz semi-sweet or milk chocolate
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets. Cream butter and sugar until fluffy. Add eggs, vanilla, milk.
- Mix Dry Ingredients: Combine flour, cocoa, baking powder, salt. Add to wet mixture, fold in coconut to form dough.
- Bake: Roll dough into balls, flatten, bake for 10-12 minutes. Cool on wire rack.
- Fill: Melt chocolate, sandwich cookies together with chocolate. Let set.

- Use dark or white chocolate for variations.
