Description

  • 1/2 cup granulated sugar
  • 1/2 cup mixed dried fruit (like raisins, currants, or chopped dried apricots)
  • 1 large egg
  • 3 tablespoons milk (plus more if needed)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, cinnamon, and salt. Add cold butter and rub it into the flour until mixture resembles coarse crumbs.
  3. Add sugar and fruit: Stir in sugar and dried fruit.
  4. Combine wet ingredients: In a small bowl, whisk together egg, milk, and vanilla. Pour into dry ingredients and mix to form a stiff dough.
  5. Form and bake: Drop mounds of dough onto baking sheet. Bake for 15–18 minutes until golden brown. Cool on a wire rack before serving.
