Description
A delightful and easy-to-make dish featuring crispy roasted baby potatoes paired with creamy baked feta cheese and garlic. This recipe combines herbs and spices to enhance the flavors and makes for a perfect comforting side or a light main course.
Ingredients
Scale
Potatoes and Seasoning
- 1 lb baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
Cheese and Aromatics
- 200g feta cheese block
- 4 cloves garlic, peeled and smashed
Garnish
- Fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect roasting temperature for the potatoes and feta.
- Prepare Potatoes: Place the halved baby potatoes on a baking sheet. Drizzle with olive oil and sprinkle with dried oregano, paprika, salt, and pepper. Toss the potatoes so they are evenly coated with the seasoning and oil.
- Add Feta and Garlic: Make a space in the center of the baking sheet and place the block of feta cheese there. Arrange the smashed garlic cloves around the potatoes on the tray.
- Roast: Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy, and the feta is softened with a slight browning on top.
- Combine: Remove the baking sheet from the oven. Using a spoon, carefully break up the softened feta cheese and toss it gently with the potatoes and garlic, allowing the feta to melt into the potatoes for a creamy texture.
- Garnish and Serve: Garnish with fresh parsley if desired, then serve warm as a side dish or light meal.
Notes
- Use baby potatoes for the best texture; larger potatoes can be substituted but may require longer roasting time.
- Adjust the seasoning to your taste; adding chili flakes can add a spicy kick.
- For a dairy-free version, substitute feta with a vegan cheese alternative.
- This dish pairs well with grilled meats or a fresh green salad.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven for best results.
