Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready by the time you’ve prepared the chicken and peaches.
  2. Tenderize the Chicken: Place the chicken breasts inside a large resealable bag and gently pound them with a meat tenderizer or rolling pin until they are about 1/2 inch thick. This helps the chicken cook evenly and stay juicy.
  3. Marinate: Add the BBQ sauce and thinly sliced red onions to the bag with the chicken. Seal the bag and gently massage it so the marinade coats the chicken thoroughly. If preparing ahead of time, refrigerate the bag for up to 24 hours to let the flavors develop.
  4. Assemble in Baking Dish: Lightly spray a 9×13-inch baking dish with nonstick spray. Transfer the marinated chicken breasts into the dish, spreading them out evenly. Lay the thickly sliced peaches on top of the chicken breasts in an even layer.
  5. Bake: Place the baking dish into the preheated oven and bake for 20 to 25 minutes. Check that the internal temperature of the chicken reaches 165°F (74°C) and that the peaches are tender.
